Job description/responsibilities:

Camp Airy / Thurmont, MD
All cooks report to the kitchen manager / food service manager.
Cooks are Responsible for providing meals for campers and staff during summer camp program, preparing meals for special diets, ordering food and cleaning/ organizing kitchen and appliances.
All cooks works as a team and communicate daily with the Dining Hall Manager (DHM) and Inventory Supervisor.
Responsibilities include but are not limited to:
Complete menu items and portions
Feed 400-700 campers and staff per meal.
Follow and execute weekly menu and recipes.
Prepare all meals on time as scheduled or assigned by the Kitchen manger.
Food and meal prep.
Knowledge of food allergies and food related diseases, and the ingredients that may cause the allergy/disease.
Be willing and prepared to meet special food requirements for both campers and staff gluten free and vegetarian diets.
Operate standard kitchen equipment safely and efficiently.
Clean and maintain kitchen equipment, utensils, and appliances - Sanitize kitchen surfaces regularly throughout the day.
Adhere to all food production regulations.
Maintaining a safe, sanitary work environment meeting all health code standards.
Wash hands frequently while working in the kitchen and in accordance with department of health regulations.
Assist in weekly deep cleaning of specific areas in the kitchen, e.g., floors, commercial equipment, etc.
Use PPE (personal protection equipment) as needed or instructed.
Report any accidents or injuries to supervisor.
On occasion and based on skills - Cooks might be assigned to teach and train international food prep staff on various kitchen skills (knife skills, using commercial equipment, cooking temps, food safety, etc.)
Physical Requirements:
· Ability to lift and carry heavy objects, up to 50lbs.
· Ability to stand and walk for long periods of the day
· Sit, stoop, kneel, crouch.
· Work in extreme heat, Work with noise, Work with chemicals.
· Hear, see, and talk.
· Read and do simple calculations.
Cooks may be asked to perform all elements of food service and kitchen work including help with receiving inventory, serving on the line, etc.
