Are you passionate about pastry arts and eager to learn from the best? River Oaks Country Club is seeking a Pastry Sous Chef to join our exceptional culinary team. This is a unique opportunity to work alongside award-winning Olympic Chef Darrin Aoyama and hone your craft in an environment of excellence and creativity. The Pastry Sous Chef is responsible for all pastry production for the club restaurants and all other functions in the club. Develop pastry-related recipes and ingredient purchase specifications. Decorate pastry items for special events such as buffets and receptions. Supervise bakery employees. Assist in budget development and monitoring for bakery. Maintain highest professional food quality and sanitation standards. Competitive Compensation| Excellent benefits | World-Class training| Beautiful location | Free employee meals Duties and Responsibilities Hires, trains and Supervises: all subordinate bake shop personnel. Plans, prepares and/or decorates special pastry items as necessary. Approves the requisitioning of all products and supplies needed for the bakery. Ensures that high standards of sanitation and cleanliness are maintained throughout the bake shop at all times. Establishes controls to minimize food and supply waste and theft. Safeguards all bake shop employees by implementing training to increase their knowledge about safety, sanitation and accident prevention principles. Develops bake shop recipes and techniques for pastry production which help to assure consistent high quality; exercises portion control over bake shop items. Evaluates bake shop products to assure that quality standards are consistently attained. Performs other tasks as assigned by the Executive Chef or General Manager. Schedule Bake Shop employees. Assist with maintaining harmony in the kitchen and relationship with front of the house at all times. Enter updated weekly schedules on Fridays for upcoming week. Review timecards the end of each week and approve by the following Monday morning for payroll purposes. Ensures that the walk in freezer is neat, free of ice build up and cleaned on a daily basis. Assume all responsibilities in the absence of the Pastry Chef.
Job requirements:
Qualifications A passion for pastry and culinary arts. Relevant professional experience in pastry or baking. Strong attention to detail and commitment to quality. A collaborative team player with a desire to learn and grow. Personal Characteristics Comfortable to delegate both routine and important tasks to direct reports. Able and willing to correct and coach performance of the team. Enjoys working hard and seizing opportunities as they present themselves. A clear communicator; Able to establish clear direction for the team. Able to prioritize effectively and concentrate on the most critical tasks.
